Wine Name and Vintage
2021 Timothée Delalle 'Cabernets'

Grape Varietals
90% Cabernet Franc, 10% Cabernet Sauvignon

Region
Indre-et-Loire, Loire Valley, France

Viticulture
The estate is in organic conversion, avoiding synthetic chemicals and cultivating vines with a focus on terroir expression. The vineyards, averaging 40 years old, are planted on complementary geological sites in Luynes and Fondettes, situated on the right bank of the Loire River. The soils are worked to encourage deep root growth into the rock, enhancing complexity in the wines.

Winemaking and Aging
Winemaking: Spontaneous fermentation with no additions, except minimal sulfur at bottling if needed.
Aging: The wine is vinified with a low-intervention approach, reflecting the land's purity and varietal character.

Tasting Notes
A fresh and clean expression of Cabernet Franc and Cabernet Sauvignon, showing lively acidity and subtle tannins. Notes of red berries, graphite, and a touch of herbal complexity define this Loire Valley red.

Food Pairing
A versatile food wine, pairing well with grilled meats, roasted vegetables, and soft-ripened cheeses. Serve slightly chilled at 55°-60°F.

About the Winemaker
Timothée Delalle is an emerging talent in the Loire Valley, having trained in Geneva and under the guidance of Jacky Blot of Montlouis-sur-Loire. His philosophy is to create unfettered expressions of his parcels in Luynes and Fondettes, emphasizing minimal intervention and purity of fruit. His wines offer a distinctive perspective on lesser-known Touraine terroirs.
