Fattoria Lavacchio, nestled in the town of Pontassieve in Tuscany, Italy, is a historic organic estate with roots dating back to the 18th century under the Peruzzi family. In 1840, it was acquired by the Marchese Strozzi Sacrati and later purchased in 1978 by the Lottero brothers from Liguria. Today, the estate is owned by Faye Lottero, originally from Genoa, and her partner Dimitri Sidorenko.
Situated on the summit of Montefiesole hill, between Sieci and Pontassieve, the estate spans 110 hectares of vineyards planted on stony soils rich in galestro. Fattoria Lavacchio produces wines under renowned denominations, including Chianti DOCG, Chianti Rùfina DOCG, Colli della Toscana Centrale, and Vin Santo del Chianti Rufina DOC Riserva. Since 2011, the estate has specialized in no-added-sulphite wines, crafting minimalist and allergen-free expressions. Certified organic since 2004, they also incorporate biodynamic principles while retaining their organic certification.
In addition to vineyards, the estate cultivates olives, raises rabbits and chickens, and manages truffle-bearing woodland, further enriching its diverse agricultural heritage.
This sparkling pink wine, notable for its fresh and juicy palate with vibrant acidity and flavors of strawberry and raspberry. Completely natural and free of added sulfur, this wine undergoes a natural re-fermentation in the bottle. It is suggested to gently turn the bottle upside down before opening to blend the yeast sediment at the bottom, enhancing the aromas.
